Grapes: Sangiovese 95%, Alicante 5%
Vines: grapes mainly from old Sangiovese clones (approx 30 years). High density planting, selected root-stocks, and extremely limited production, (less than a kilo per plant), all combine to help the growth and complete maturation of the grapes. The micro-climate is definitively Mediterranean, with high levels of sunshine and scarce rainfall.
Vinification: The wine was fermented completely in small, open French oak barrels aged more than three years. Malolactic fermentation and maturation in first, second
and third use barrels (50 %, 30 % and 20 % respectively), mostly Allier MT, for 12-13 months.
The winery's icon wine, Capatosta is a glorious interpretation of Maremma's terroir. To rich Sangiovese, the hot toast of Tuscan wine-making, we add a spread of Alicante, a traditional jammy variety. The result: smooth, elegant and concentrated, and with an additional touch of style and solid structure. A real Maremma thoroughbred.
