The result is a very dark, sweet wine, with good balance of sugar and acidity, very intense flavors of black olives, dry herbs, dry tomato, black olives, cassis, blueberry, chocolate, coffee, toffee, old oak, and much more. Very long finish and a potential for ageing many years. It’s a wine that will continue to develop for many years in bottle.
Grapes: Alicante 100%
Vineyards: estate’s oldest Alicante vineyards (30 YO) in the Comune di Grosseto, 8 km from the seaside, nearly on sea level, sandy soils.
Vinification: the grapes are harvested a bit earlier than usual to maintain freshness and acidity. The berries are put in a single layer on special plastic boxes that allow the air through from all sides. The boxes are stored in a room at 19 C of temp. and 50-60% humidity and they are let shrivel and dry for at least two months. During this time they loose up to 70% of their weight because of water evaporation. The grapes are then fermented with their stems for 30/45 days at low temp., in old open oak barrels. When the desired sugar content (100/130 gr/Lt) is reached the fermentation is stopped by quickly cooling the temperature down to 5 C. The wine is aged for 2 years in old wood (225 Lt).
